Cafe Du Monde in New Orleans is a legendary coffee house, the first branch of which was opened in 1985 in Esplanade Mall. It expanded and now enjoys several other locations including Lakeside Mall, French Market, Oakwood Mall, Covington, Riverwalk Market Place, Mandeville and veterans Boulevard. French people developed the taste of chicory and coffee. During the civil war coffee production was not up to the mark and hence the French added chicory to enhance the brew and the flavor of coffee. Chicory is actually the root of a plant called endive which is a type of lettuce. The roots of this plant are grounded and roasted and then added to coffee to make its taste lighter.
This is mixed with Au Lait coffee that is served at Cafe Du Monde. The proportion in which it will be mixed is left on the connoisseurs. Some people like it with more milk and others with less milk. At Cafe Monde you will also get decaffeinated coffee which is prepared with the help of Ethyl Acetate.
Acadians also imported Beignets to Louisiana. The beignets are basically fried fritters with a filling of fruits inside. Originally these were prepared in this way.
